摘 要: | [目的]确定天等指天椒的最佳干燥工艺条件,为其加工开发与利用提供参考依据.[方法]采用热风—微波联合干燥天等指天椒,考察热风干燥温度、微波功率对其干燥效果的影响,并通过对比干燥耗时及干燥天等指天椒Vc含量进一步验证采用热风—微波联合干燥天等指天椒的可行性.[结果]先用80℃热风干燥40 min再进行60 W微波干燥5 min,天等指天椒的干燥效果良好,其干燥时间仅需45 min,较单一热风干燥的时间(210min)缩短了78.6%;且Vc损失最少,含量最高.[结论]采用热风—微波联合干燥天等指天椒,既能缩短干燥时间、提高生产效率,又能保证产品品质,在实际生产中可进一步推广应用.

Abstract: | [Objective]The optimum drying conditions for Tiandeng Chilli Padi were determined to provide references for its processing and application.[Method]Tiandeng Chilli Padi was dried by hot-air and microwave to study the effects of hot-air drying temperature and microwave power on drying and further verify its feasibility by comparing drying time and Vc content.[Result]The results showed that drying in 80 ℃ of hot air within 40 min combined with 60 W of microwave drying could get a shorter drying time,higher drying efficiency and lower loss of Vitamin C.It only took 45 min,which was 78.6% less than hot-air drying alone (210 min).[Conclusion]The combination drying mode of hot air and microwave should be extended in practical production due to its short drying time,high efficiency and good quality. |
