摘    要:为分离筛选出产红色素能力强的菌株,采用不同培养基,以稀释倒平板法及平板划线法从红曲粉中分离纯化,再以红色素含量为指标,进行摇瓶发酵试验,优选出产红色素的菌株。结果表明:经分离纯化获得3株产红色素霉菌M1、M2和M3;发酵试验表明,M1菌株在黄豆芽汁发酵液和M3菌株在马铃薯发酵液中产红色素能力都较强,经形态学鉴定证实M1和M3菌株是红曲霉菌,且对酸和乙醇有一定的耐受性。

Abstract:Three red pigment producing strains(M1,M2and M3)were isolated and purified from red yeast rice powder by the pour palate method,steak plate method on different media and a shake flask fermentation test.The fermentation test showed that M1 strain cultured in fermentation liquor of soybean sprouts and M3 strain cultured in potato fermentation liquid were of strong potential to produce red pigment.The morphological identification results showed that M1 and M3 strains with a certain toleranceed to acid and etha...
