寿光鸡和汶上芦花鸡肉用性能比较分析

摘    要:随机选取相同环境下饲养的90日龄汶上芦花鸡和寿光鸡各30只,测定其肉用性能,并进行品种间的比较分析。结果表明:90日龄的活体重汶上芦花鸡为939.35 g,寿光鸡为1 504 g;寿光鸡在活重、半净膛重、全净膛重和翅比率性状上极显著高于芦花鸡(P0.01),而芦花鸡在屠体率和腿比率性状上极显著优于寿光鸡(P0.01),半净膛率显著优于寿光鸡(P0.05)。两个地方鸡种的胸肌pH值在宰后15 min至宰后24 h内均呈下降趋势,各时期pH值均符合正常肌肉要求范围。芦花鸡在腹脂重、腹脂率和肌内脂肪性状上高于寿光鸡,但只在腹脂率性状上存在极显著差异(P0.01)。

Abstract:Chickens including 30 Shouguang chickens and 30 Wenshang Luhua chickens were used for the comparative analysis in meat performance at the age of 90 days.The results showed that the living body weight of Wenshang Luhua chickens and Shouguang chickens was 939.35 g and 1 504 g respectively.The living body weight,half-eviscerated weight,eviscerated weight and wing percentage of Shouguang chickens were significantly higher than those of Wenshang Luhua chickens(P < 0.01).The Wenshang Luhua chickens had very significantly higher dressed percentage(P < 0.01),percentage of quarter(P < 0.01),and significantly higher percentage of half-eviscerated yield(P < 0.05) compared with Shouguang chickens.From 15 minutes to 24 hours after slaughter,the pH value of the two strains' breast muscles displayed a declining trend,and was within the range of normal muscles.The abdominal fat weight,percentage of abdominal fat and content of intramuscular fat of Wenshang Luhua chickens were higher than those of Shouguang ones,and the difference between them in percentage of abdominal fat was significant(P < 0.01).
