近红外光谱仪测定东北民猪眼肌肌肉组分的研究

摘    要:试验旨在探讨近红外仪光谱仪应用于测定猪眼肌肉质指标分析的可行性.利用TQ Analyst分析软件采用偏最小二乘回归(PLS)方法建立蛋白质、水分、粗脂肪和脂肪酸含量的定量检测模型.结果表明,蛋白质的相关系数达到0.98、SD/RMSEP达到3.9;水份的相关系数达到0.97、SD/RMSEP达到3.67;肌内脂肪的相关系数达到0.96、SD/RMSEP达到3.75;脂肪酸中C18:2相关系数达0.92、SD/RMSEP达到3.27,PUFA相关系数达0.92、SD/RMSEP达到3.65.结果表明,采用近红外光谱法能同时检测猪眼肌中蛋白质、水份、肌内脂肪和脂肪酸含量,检测误差小、结果准确可靠,与化学分析方法无明显差异且重现性好,可应用于猪眼肌肉组分指标快速定量检测.

Abstract:The quantitative detection model of protein,water,crude fat and fatty acid content was established with the partial least-square regression method(PLS) in the TQ Analyst Software,to determinate the feasibility of detecting the longissimus muscle traits in Min pig by the near infrared spectrometer.The results showed that the correlation coefficient of protein was 0.98 and the SD/RMSEP ratio reached 3.9;the correlation coefficient of water was 0.97 and the SD/RMSEP ratio reached 3.67;the correlation coefficient of intramuscular fat was 0.96 and the SD/RMSEP ratio reached 3.75;the correlation coefficient of C18:2 in fatty acid was 0.92 and the SD/RMSEP ratio reached 3.27;the correlation coefficient of PUFA was 0.92 and the SD/RMSEP ratio reached 3.65.The results indicated that protein,water,intramuscular fat and fatty acids contents could be correctly and reliably detected by the near infrared spectrometer method.The results of this method have good reproducibility and no significant difference with the chemical method.The near infrared spectrometer method could be used to quickly and quantificationally detect the longissimus muscle traits in Min pig.
