甘薯粉渣的营养成分含量及再利用研究

摘    要:
[目的]探索甘薯粉渣的营养成分含量及其再利用途径.[方法]在4个加工地点以甘薯品种“商薯19”的鲜薯块提取淀粉后的粉渣为材料,测定了主要营养成分和含水量.[结果]试验得出,甘薯粉渣中(以湿重计)平均含水分83.75%,淀粉101.15 g/kg,脂肪0.255%,蛋白质0.497 3%,锌11.18 mg/kg,铁1 219.00 mg/kg,硒0.032 3 mg/kg,钙6 460.00 mg/kg,均未检测出维生素A、维生素C和氯原酸.根据粉渣内残留淀粉量较多、且富含多种有利于人体健康的营养物质的特点,提出了以此生产食用酒精和膳食纤维保健食品的再利用方案.[结论]研究可为甘薯粉渣的充分开发利用提供参考依据.

Abstract:
[ Objective ] To explore nutrient composition content in sweet potato power residue and reutilization way. [ Method ] With power residue of Shangshu 19 as material, the main nutrient composition and water content was determined. [ Result] The results showed that, in sweet potato power residue, average water is 83.75%, starch 101.15 g/kg, fat 0.255%, protein 0. 497 3%, Zn 11.18 mg/kg, Fe 1 219.00 mg/kg, Se 0.032 3 mg/kg, Ca 6 460.00 mg/kg, Vc, VA and chlorogenic acid are not detected. Aiming at the characteristics of more starch residue and nutritional components, the reutilization scheme for producing edible alcohol and dietary fiber health food was put forward. [ Con- clusion] The study can provide reference basis for futly development and utilization of sweet potato power residue.
