摘    要:在20℃、25℃、30℃、35℃四个温度下对稻谷进行充氮气调储藏,通过对发芽率、脂肪酸值、电导率、过氧化氢酶、游离巯基含量等理化指标的测定,探讨不同温度下充氮气调对稻谷品质的劣变规律。结果表明:相同温度下,充氮气调组与对照组相比延缓了稻谷品质的变化;稻谷充氮气调,低温条件下的品质变化幅度比对照组小但不明显,高温条件下的品质变化幅度明显小于对照组。

Abstract:Paddy had been stored in 20℃, 25℃, 30℃, 35℃ with charging of N2. The phosical and chemical prop- erties including the germination rate, fatty acid value, electrical conductivity , catalase activity, free sulf- hydryl group content had been examined to study the quality changing rules of stored paddy under N2 CA. The results showed that the change of grain under N2 CA_ Storage was delayed comparing with controlled groups at same temperatures. The change of grain quality under N2 CA Storage was less than Controlled group, but they are unremarkable in low temperature. In high temperature, the quality of grain under N2 CA Storage is significantly less than the controlled groups.
