| Abstract: | To compare the abilities of organic acids and sulfite to inhibit potato polyphenol oxidase.With spectrophotometer.At the concentration of 10 mmol/L,the abilities of inhibition are at the order of oxalic acid>sodium sulfite>acetic acid>citric acid>tartaric acid>gallic acid.It's an efficient and secure way to use organic acids such as oxalic acid as the inhibitors of enzymatic browning. |
