普洱生茶和熟茶茶多酚的提取及抗氧化活性研究

摘    要:[目的]为普洱生茶和熟茶中茶多酚的开发利用提供理论依据。[方法]采用有机溶剂萃取法、离子沉淀法和吸附分离法分别从普洱生茶和熟茶中提取茶多酚,测定提取物对2,2-二苯代苦味酰基自由基(DPPH.)的清除作用。[结果]普洱生茶的茶多酚提取率都高于熟茶,普洱生茶茶多酚对DPPH.的清除率高于熟茶。[结论]普洱生茶的抗氧化活性高于熟茶。

Study on the Extraction and Antioxidant Activities of Pu-Er Crude Tea and Pu-Er Ripe Tea Polyphenol

Abstract:[Objective] The aim was to provide the theoretical basis for development and utilization of Pu-Er crude tea and Pu-Er ripe tea polyphenols.[Method] Tea polyphenol was respectively extracted from Pu-Er crude tea and Pu-Er ripe tea by means of extraction by organic solvent,precipitation by ion and fractionation by adsorption.At the same time,the ability for scavenging DPPH· free radical of the extracts was studied.[Result] There was a higher tea polyphenols extraction ratio from Pu-Er crude tea than Pu-Er ripe tea,Pu-Er crude tea had a more remarkable scavenging activity to DPPH free radical than Pu-Er ripe tea.[Conclusion]The antioxidant activity of Pu-Er crude tea was better than Pu-Er ripe tea.
