真菌漆酶酶促合成茶黄素工艺的研究

摘    要:
采用漆酶体外酶促氧化茶多酚合成茶黄素。研究结果表明,在实验反应体系中,酶促氧化的最佳条件为:反应温度50℃,最佳pH值2.3,漆酶质量浓度1.8g/L,反应时间1.5h。其中pH值和温度是反应体系中2个极其重要的影响因素。与传统合成方法相比,该方法可以缩短反应时间,提高茶黄素产量。

Abstract:
The theaflavins was synthesized from tea polyphenol by using laccase enzyme-catalysing oxidation.The results showed that the optimum condition of theaflavins synthesizing is 50 ℃temperature,pH value of the present system is 2.3,the concentration of enzymes is 1.8 g/L,oxygen time is 1.5 h.Temperatures and pH values in the reaction system are the most important factors.By using this method,the reaction time is shortened than that by traditional method and the yield of theaflavins was increased.
