甘肃省不同产地籽瓜瓤皮成分分析

摘    要:以甘肃省3个产地所产籽瓜为材料,进行基本成分、氨基酸及矿质元素分析。结果表明:水分含量以瓤最高(97.32%~97.98%),内皮次之(96.64%~96.86%),外皮最低(91.47%~91.76%);灰分含量以瓤最低(0.22%~0.27%),内皮次之(0.25%~0.39%),外皮最高(0.45%~0.69%);含酸量瓤中 0.30%~0.43%,内皮 0.37%~0.69%;还原糖和总糖含量,瓤为 1.52%~3.05%,内皮 0.34%~1.42%;瓤和皮中蛋白质、纤维素和脂肪含量均分别低于0.45%,0.30%和0.025%,抗坏血酸含量为74.40~132.90mg/kg,内皮中含量普遍较高。18种氨基酸在籽瓜瓤皮中均有存在,其中必需氨基酸以缬氨酸、亮氨酸和苯丙氨酸含量较高,非必需氨基酸以谷氨酸、丝氨酸和精氨酸含量较高。在所测的14种矿质元素中,籽瓜瓤皮中常量元素以K、Ca、Mg、P、S含量较高,微量元素以Al、Fe、Zn含量较高,矿质元素含量以外皮最高,内皮次之,瓤最低。不同产地所产籽瓜的成分含量均在一定程度上存在差异。

Abstract:The composition of seed-used watermelon (Citrullus lanatus var. megulaspemus Lin and Chao) produced in three main areas of Gansu was analyzed. The results showed that moisture content was the highest in pulp (97.30 %-97.98 %), the next in inner-rind (96.64 %- 96.86 %), and the lowest in rind (91.47 %-91.76 %). Ash content was the lowest in pulp (0.22 %-0.27 %), the next in inner-rind (0.25 %-0.39 %), and the highest in rind (0.45 -0.69 %). Titration acid in pulp and inner-rind were 0.3 %-0.43 % and 0.37 %-0.69 %, respectively. Reductant and total sugar in pulp and inner-rind were 1.52 %-3.05 % and 0.34 %-1.42 %, respectively. Protein, fiber and fat in pulp and inner-rind were below of 0.45 %, 0.3% and 0.025 %, respectively. Ascorbic acid was 74.40-132.90 mg/kg FW, and higher in inner-rind. 18 kinds of amino acid can be measured in pulp and rind, and Glu, Ser and Arg showed higher content. Val, Leu and Phe content were higher among indispensable amino acids. K, Ca, Mg, P and S content were higher in 14 kinds of mineral. Al, Fe and Zn content were higher in trace elements. Minerals content was the highest in rind, the next in inner-rind, and the lowest in pulp. There was a certain degree difference in the composition of seed-used watermelon produced in three main areas.
