摘    要:在防雨池栽培条件下,以优质强筋小麦品种济麦20为试验材料,研究了不同灌水频次对籽粒蛋白质组分及其品质(粉质仪参数和湿面筋含量)的影响。结果表明:面团形成时间、面团稳定时间和湿面筋含量均随灌水次数的增加呈先升高后降低的趋势,其中以灌两水(W2)处理最优。可溶性谷蛋白含量、不溶性谷蛋白含量、谷蛋白总含量、不溶性谷蛋白/谷蛋白比值、D(4,3)和D(3,2)也呈现类似的变化趋势。逐步回归分析表明,不同灌水处理条件下,不溶性谷蛋白含量是影响面团稳定时间的关键因素。
