| 摘 要： | 近年来,人工神经网络的应用领域迅速扩大,在图像识别和语音识别方面展现了很好的智能特性.它在模式识别、数据处理、自动控制和预测中广泛应用,其优势在于不确定性系统的控制和预测.食品工业所涉及的食品加工过程、品质控制以及成分分析往往是属非线性和非稳态的系统,应用人工神经网络能够促进食品工业的发展.为此,首先简单介绍了人工神经网络的原理;然后,总结了国内外将人工神经网络应用于食品工业的一些情况,最后,展望了人工神经网络的应用前景.
