摘    要:反式脂肪酸是一种具有反式构型的不饱和脂肪酸,来源广泛,反式脂肪酸摄入过量对人体健康有很大危害。介绍了反式脂肪酸的结构、性质、食物来源及气相色谱分析方法研究进展,重点介绍了我国气相色谱法对反式脂肪酸的检测。

Abstract:Trans-fatty acid(TFA) is a kind of unsaturated-fatty acid with trans-configuration.There are very extensive source.The epidemiological survey data suggests that TFA is harmful to human health.This paper gives an overview of TFA on its properties,sources,hazards and detection methods.This paper also reviews the analysis of trans-fatty acid in food by GC in China.
