| 摘 要： | 目的]分析青蛤和杂色蛤的化学组成和铁、锌、铜、铅、铬的含量。方法]以连云港市售的青蛤和杂色蛤为试材，对其软体部分的一般化学组成及铁、铜、锌、铅、铬含量进行分析。结果]青蛤和杂色蛤软体组织中蛋白质含量（以干基计）分别为44．06％和57．09％，脂肪含量（以干基计）分别为11．31％和13．52％，是高蛋白、低脂肪的水产品；重金属含量（以鲜重计），铁分别为200．63和120．74mg／kg，锌分别为15．27和5．13mg／kg，铜分别为2．14和1．93mg／kg，铅分别为0．17和0．23mg／kg，铬均未检出。结论]青蛤和杂色蛤的蛋白质含量较高，脂肪含量较低，含有一定量的微量元素铁、锌和铜，且锌、铜、铅、铬的含量均低于我国无公害水产品安全要求（GB18406．4-2001）中的限量标准。可满足人体对微量元素的部分需要。
