鱼类下脚料中鱼油的提取工艺研究

摘    要:鱼油所含的磷脂是动物脑、神经组织、骨髓、心、肝和脾中不可缺少的组成部分,既有助于脂的消化吸收、转运和形成,又是生物膜的重要结构物质。目前金枪鱼下脚料的利用主要是提取活性多肽、胶原蛋白、生产鱼骨粉等。金枪鱼加工中产生大量的下脚料,如果用于提取鱼油,可以创造可观的经济效益。重点研究了酶解工艺条件对鱼油提取率的影响,结果表明,胰蛋白酶提取鱼油的酶解工艺参数为:酶解温度45℃,酶添加量1.5%,料液质量比为1:1,酶解时间4h,酶解pH值8。在此条件下,粗鱼油的提取率为4.32%。
