| 摘 要： | 随着冷冻冷藏食品的日益发展,使全程监测冷藏链中的食品温度变化历程变得更为重要,作为质量监控器的时间—温度指示卡(Time Temperature Indicators,TTIs)应运而生。TTIs可以指示包装食品的温度变化和因温度变化引起的品质下降水平。论述了时间—温度指示卡的应用概况、原理、分类及研究意义。

| Abstract: | With the development of freezing food Industry more and more daily,monitoring temperature of cold chain changes in the process becomes more important. Time Temperature Indicators (TTIs) arises at the historic moment as the quality monitor. TTIs can indicate the temperature variety of packaged foods and the quantity descended caused by temperature variety. The work applications,principles,classification and research significance of TTIs state this paper. |
