摘    要:测定了稀褶乳菇子实体中氨基酸、矿质元素、多糖、粗蛋白、粗脂肪、灰分和粗纤维含量。结果表明,测定的18种氨基酸中.8种必需氨基酸含量占氨基酸总量的40.23%:矿质元素K、Na、Ca、Mg、Cu、Fe、Zn、Mn含量分剐是2345.62、164.48、17.79、90.96、18.41、17.14、10.21和3.08mg/100g;多糖、粗蛋白质、粗脂肪、灰分、粗纤维含量分别是7.23%、30.19%、3.26%、5.33%和7.46%。

Abstract:The content of nutrient components in Lactarius hygrophroides fruit body was determined. The experiment results showed that the content of 8 kinds of essential amino acids in 18 kinds of amino acids was 40.23% and that the content of mineral elements such as K, Na, Ca, Mg, Cu, Fe, Zn and Mn in L. hygrophroides fruit bodies was 2345.62, 164.48, 17.79, 90.96, 18.41, 17.14, 10.21and 3.08 mg/100g respectively;It also showed that the content of polysaeeharide, crude protein, crude fat, ash and crude fiber in the fruit body was 7.23%, 30.19%, 3.26%, 5.33% and 7.46% respectively.
