摘    要:采用二因子多水平有重复的试验设计,通过石蜡切片法和透射电镜技术.利用DPS统计软件分析了摩杂一代水牛、广西本地水牛与广西本地黄牛的背最长肌和股四头肌的肌纤维直径、肌纤维密度和肌节长度.结果表明,摩杂一代水牛的肌肉品质比广西本地水牛的肌肉品质要好,同品种间股四头肌的肌肉品质比背最长肌要好.

Abstract:Through paraffin section method and transmission electron microscope technology, murrah buffalo and other two kinds of native cattle were studied on muscle histological characteristics and meat quality properties in a two factors experiment at multiple levels with repeated observations. Results indicated that the meat quality properties in murrah buffalo was better than that of the native cattle and the meat quality properties of musculus quadriceps femoris was better than that of musculus longissimus dorsi...
