蕨菜粗多糖对亚硝酸盐清除作用的研究

摘    要:本文以干制蕨菜为原料,利用水提醇沉法得到蕨菜粗多糖,然后采用对氨基苯磺酸-盐酸萘乙二胺分光光度法进行其对亚硝酸盐清除效果的研究。通过单因素及正交实验分析多糖浓度、反应时间、反应温度对亚硝酸盐清除作用的影响。结果表明,当蕨菜多糖溶液浓度为20mg/mL时,50℃条件下加热15min,亚硝酸盐清除率为41.1%,效果最好。

Abstract:The nitrite scavenging effect of bracken polysaccharide was mensurated by aniline-sulfonic and hydrochloride acid-naphthylamine ethylenediamine through spectrophotometry. This polysaccharide was extacted from dry bracken with water extract-alcohol extraction method. Based on the single factor experiment and orthogonal test, the influences of polysaccharide concentration, reaction time, reaction temperature on nitrite scavenging were discussed. The results showed that the process optimization on nitrite scanvenging were polysaccharide concentration 20mg/mL, and heated at 50℃ for 15min respectively. It’s scanvenging rate of nitrite reached up to 41.1%.
