摘    要:
为了减轻贮藏损失,提高机械损伤苹果的保鲜效果,以模拟机械损伤红富士苹果为材料,研究在常温贮藏条件下,壳聚糖涂膜处理对果实贮藏品质及生理指标的影响。结果表明,壳聚糖涂膜处理能够减轻机械损伤苹果贮藏过程中腐烂率和质量损失率,降低呼吸速率和果肉褐变,延缓果肉硬度、可溶性固形物及可滴定酸质量分数的下降。可见,壳聚糖涂膜处理有利于红富士苹果采后品质保持,并且增强果实的耐贮运性能。

Abstract:
To reduce storage losses and improve mechanical injury apple preservation effect, mechanical damaged Fuji apples were used as the materials to study the effects of chitosan coating on fruit storage quality and physiological indicators at room temperature. The results showed that chitosan coating could reduce the rot rate, mass loss rate, respiratory rate, flesh browning, and delay flesh firmness, slow down the decrease of soluble solids and titratable acid content during the storage of the mechanical damaged apples. Thus, the chitosan coating treatment was favorable to maintain Fuji apple postharvest quality and enhanced the performance of fruit storage and transportation.
