| 摘 要： | 分析结果表明，水竹笋可食部分占４９％－５３％，箨重４７％－５１％，不带蒲头，笋肉色泽白净略带黄绿。竹笋含丰富的蛋白质和无机元素，在众多的食用笋中，是含量最高的竹种之一。竹笋的粗纤维含量为０．６３％－０．７１％，含水量为９１％，竹笋脆爽味美，风味独特。

| Abstract: | FromananalysisofphysicalbehaviorsandmainnutritionconstituentsofPhyllostachysheterocladabambooshoots,theresultsshowtheireatablepartandtheirweightofsheaths,withouttheircattails,arerespectively49S% and47Q%,andthecolorandlusteroftheirmeatiswhitewithalightyellow.Thecontentsofproteinandinorganicelementareoneofthehightestspeciesinalltheeatableshoots.Thecontentsoftheircoarsefiberrangefrom063%to071%,whiletheirwatercontentis91%.Bambooshootsarecrispintasteanduniqueinfavor. |
