Abstract:Artificial olfactory system (electronic nose), which is mainly composed of gas sensor array and data processing apparatus, is used to imitate the function of human's olfactory system. The gas sensor array corresponds to olfactory cells, the data processing apparatus corresponds to human's brain. Compared with a single gas sensor, that system can not only counteract signal drift, but also increase selectivity and sensitivity. In this paper, the research history and the present applied situation of artificial olfactory systems are reviewed; the working principle of SnO 2 sensor arrays and the data processing methods based on neural networks are here introduced, the implementing method of evaluating and detecting food aroma by that systems is expounded. That systems may be used to evaluate the grade of aroma quality of cigarette, drink, tea, edible oil, etc., and to discriminate the fresh degree of meat and fish, there will be wide prospects in the food industry.
