摘    要:
在冷冻食品加工、贮藏、运输、分销和零售直到消费者的各个环节中,都存在着微生物污染的可能性。本文从微生物学的角度,分析了影响微生物污染形成的诸多因素,提出了保证食品安全有效措施。

Abstract:
During processing,storage,transportation,distribution,retail and ultimately being delivered to the consumer's plate,there exists possibilityof microorganismcontamination.This paper gives detailed analysis of many factors attributedto microorganismcontamination according to microbiology.After discussion,ways to ensure food safety are proposed.
