长白山黑参加工技术研究

摘    要:目的探索人参皂苷转化方法,确定最佳工艺条件,使人参皂苷Rg3等成分增加。方法以红参为原料,以红参发酵液为主的辅料,经过炖制、干燥制得黑参,用HPLC法测定20(S)-人参皂苷Rg3含量,采用正交实验法优化工艺条件。结果最佳工艺条件为:5倍原辅料量稀释,pH值为4,炖制时间为35小时。结论通过此工艺条件,黑参中20(S)-人参皂苷Rg3含量为原料红参的200倍以上。

Abstract:Objective Exploration of ginseng saponins transformation method,to determine the best process condition,make it one of ginseng saponins 20(S)-Rg3 component increased.Methods With red ginseng as raw material,with red ginseng fermented liquid mainly accessories,through stewing,drying,And by HPLC method for the determination of the content of ginsenoside 20(S)-Rg3 as indicator,using the orthogonal experimental method to optimize the process conditions.Results The optimum conditions are :5 times the amount of material l,pH value of 4,stew 35 hours.Conclusion Through this process,the content of 20(S)-Rg3 in black ginseng can be increased by 136 times.
