摘    要:研究了30—60℃热空气处理30min对4℃冷藏“丰香”草莓果实的保鲜效应。结果表明,40℃热空气处理可以明显抑制贮藏期间果实花青素的积累,延缓果实可溶性固形物、可滴定酸含量和硬度下降,同时抑制草莓果实的呼吸速率,降低草莓果实的腐烂指数和失重率,维持较高的超氧化物歧化酶(SOD)活性,抑制纤维素酶活性,同时降低超氧阴离子(O2^-)的产生速率和丙二醛(MDA)含量,有利于保持果实的贮藏品质。

Abstract:The effects of 30~60 ℃ hot air treatment for 30 min on the postharvest quality of strawberry(Fragaria ananassa Duch cv."Toyonoka") stored at 4 ℃ fridge were studied in the paper.The results showed that 40 ℃ hot air treatment significantly inhibited anthocyanin accumulation,maintained higher levels of soluble solid,titratable acid and firmness of berries.The investigation of postharvest physiology indicated that hot air treatment depressed the fruit respiration,the decay rate and weight loss rate,maintained higher activities of superoxide dismutase(SOD),but suppressed the cellulase activity and O2-· production rate and malondialdehyde(MDA) content.Therefore,suitable hot air pretreatment could preserve the quality of the fruits during cold storage.
