烟叶在烘烤过程中脂氧合酶活性及其作用的研究

摘    要:采用本校设计的电热式温湿度自控烤烟箱,研究了烟叶在烘烤过程中脂氧合酶活性变化及其对C12~C20脂肪酸、叶绿不和类胡萝卜素、醚提物等降解的影响。结果表明,随着烘烤进程发展,脂氧合酶活性逐渐升高,在48h出现一个活性高峰,而后逐渐降低,直到完全消失。不饱和高级脂肪酸、叶绿素、类胡萝卜素等的降解与脂氧合酶活性变化呈显著相关,饱和脂肪酸的降角与脂氧合酶有一定相关性。在调制过程中,48~72h仍为一关键时

Abstract:Effect of lipoxygenase activities on degradation of C12~C20 fatty acid,chlorophyll carotenoid and resolution of ether were studied by using the electric heat flue-curing tobacco leaf''s barn designed and made by our university in which temperature and moisture were controlled automatically.The results showed that with the proceeding of curing,the lipoxygenase activities increase gradually and reach the peak after curing 48 h,then decrease gradually and disappeared at last.The degradation of unsaturation fatty acid,chlorophyll carotenoid and so on is high related to the change of lipoxygenase activities.To some extent,saturation fatty acid,resolution of ether is related to lipoxygenase activities.
