摘    要:介绍了发芽糙米γ-氨基丁酸(GABA)含量的各种检测方法,重点介绍了Berthelot改良比色法、改良纸层析法、氨基酸分析仪和柱前衍生液相色谱等4种常用的方法。综述了国内外对发芽糙米GABA积累机理.发芽条件和工艺参数的研究情况。提出了根据试验需要选择合理的GABA检测方法的建议。应对不同水稻品种发芽糙米中GABA含量差异形成的原因及基因型进行遗传分析,以筛选出高GABA含量和高谷氨酸脱羧酶活性的品种,为农产品深加工提供优质原材料。

Abstract:Four methods of gamma- aminobutyric acid (GABA) determination including Berthelot modified colorimetric method, modified paper chromatography, amino acid analyzer method and derivative high performance liquid chromatogra- phy were reviewed and evaluated in this paper. Studies on GABA accumulation mechanism in germinated brown rice, germination conditions and process parameters at home and abroad were summarized. Different determination methods should be elected according to experimental requirement. Different rice varieties or different genetic types should be analyzed in order to screen rice varieties with high GABA content and high glutamate decarboxylation enzyme activity to supply high quality raw materials for deep processing of agricultural products.
