摘    要:
对冬枣采后可溶性固形物、糖、酸、VC、转红、褐变等品质指标的变化进行了综述,并对与衰老有关的酶以及呼吸、乙烯等生理生化指标的变化进行了探讨.

Abstract:
Dongzao Jujube is one of the best Jujube cultivar for fresh-eating for its delicious taste and abundance nutritions.But it is subjected to water-loss,crimple, fermentation softening,decay,loss of vitamin C and finally lost its edible and commoditiy value. So the storage of Dongzao Jujube has been researched focus for many years. Many literatures have reported its quality,physiology and bio-chemical characteristics duing postharvest. The quality changes of soluble substance contents, carbohydrate, titrate acid, vitamin C, red- turing, browning, physiological and bio-chemical changes of enzymes related to senescence, respiration and ethene production were summrazied.
