摘    要:在用广西野生茶资源制工夫红茶时,采用分光光度计在460nm处检测发酵叶茶汤的吸光度值,通过吸光度值的变化来控制其发酵程度,试验结果表明,利用广西野生茶制工夫红茶,在发酵过程中,发酵叶茶汤的吸光度值呈规律性变化,其吸光度值的变化规律为:由小→大→小,当监测到发酵叶茶汤的吸光度值由大到小变化时,立即停止发酵,进行干燥,所得...

Instrument test's application in fermentation control of making Guangxi wild tea into black tea

Abstract:During the process of making wild tea into kung-fu black tea,spectrophotometer was adopted to test fermented tea soup's absorbency value at 460nm,through the change of absorbency value to control its fermentting degree.The experiments results show that during the fermentation,fermented leaves' absorbency values changed regularly from small to big to small,when the absorbency value changed from big to small,the fermentation should be ceased and then leaves dried to get best quality of black tea.
