日常食物中亚硝酸盐及硝酸盐含量的研究

本文报道了呼和浩特市市区夏季蔬菜、腌菜和粮食中硝酸盐和亚硝酸盐的测定分析,结果表明：腌菜中亚硝酸盐的含量较高,蔬菜中硝酸盐的含量较高。由于蔬菜种植者滥施氮肥以及受排污河污水的污染,呼和浩特市市场上许多种类的蔬菜硝酸盐含量均偏高。提示：合理调节食物的食用结构,对于消除亚硝酸盐和硝酸盐造成的潜在危害具有重要意义。

STUDIES ON THE CONTENTS OF NITRITE AND NITRATE IN DAILY FOODS

This paper reported the assay results of nitrate and nitrite in vegetabltes,Preserved vegetables and grains in summertime in huhot,The resutls showed that nitrite content was higher in Preserved vegetables than in the others,and that content of nitrate was higher in vegetables than the others.Since o the soil was overrun with nitrogenous fertitizer by the farmer and were polluted by the river containing pollutants, the content of nitrate of many vegetables was higher in Huhehot than in Beijing. it was suggested that it was significant are adjrst the food structure reasonably to extricate the potential harm caused by nitrite and nitrate.
