FIZZ感官品评软件在契达干酪感官评价中的应用

摘    要:通过喜好测试、评分检验法对三种不同成熟期的契达干酪的整体风味、色泽、组织状态等感官品质进行了评价,采用FIZZ感官品评软件对品尝结果进行统计分析,结果显示:最受消费者喜爱的产品是成熟期为1个月的样品,其整体风味、组织状态均优于其它两个样品。

Abstract:This article was using preference test and sensory grading test for overall flavor,color and organization status of three cheddar cheese samples.After analysis of the sensory test results with FIZZ software,the results showed that the customer prefers one to others;the overall flavor and organization status of one are better than others.
