摘    要:概述了目前世界上主要的牛肉分级标准,着重论述了机器视觉和图像处理技术在牛肉自动分级系统中的研究现状和进展,提出了现行的牛肉自动分级技术和方法面临的主要问题以及未来的发展方向。

Abstract:Implement of beef grading system play an important role in promotion of the beef production, guidance of the customers and making the beef trade prosperous, In this paper, the authors firstly summarize several prevalent beef grading standards and then point out the main weaks existing in the present beef grading systems. After analyzing and discussing the current status and development of application of the computer vision and image processing techniques to automating the beef grading system, the authors suggest that the main existing problems in automating the beef grading are how to reliably and consistently segment the meat image and to extract the features of the meat images. In addition, many efforts should be focused on finding out and establishing appropriate quantitative parameters that can be employed to efficiently express the beef palatability.
