摘 要: | 通过毛细管气相色谱法对蛋黄油甘油三酯脂肪酸相对含量进行测定,其主要脂肪酸组成为:油酸42.86%、亚油酸22.95%、棕榈酸19.91%、硬脂酸7.89%、棕榈油酸2.25%、亚麻酸0.94%,不饱和脂肪酸总含量达到69%。蛋黄油的功能成分表明,蛋黄油是一种极具开发价值的营养保健油脂。

Analysis of Fatty Acids Composition in Egg Yolk Oil |

Abstract: | The composition of fatty acids in egg yolk oil triglyceride was analyzed with capillary gas chromatography. The main composition of fatty acid was that: oleic acid 42.86%, linoleic acid 22.95%, palmitic acid 19.91%, stearic acid 7.89%, palmitoleic acid 2.25%, linolenic acid 0.94%. The total amount of the unsaturated fatty acids was 69%. As a kind of healthy oil, the functional components in egg yolk oil show that it has great developing value. |
