微波真空干燥技术及其在水产品加工中的应用

摘    要:通过阐述微波真空干燥技术的原理、特点,分析了影响微波真空干燥效果的主要因素(包括被加工物料的种类和大小以及微波真空度、微波功率、干燥时间等),并对该技术在国内外水产品加工中的应用现状及发展前景进行了探讨。随着微波真空干燥理论及设备的逐步完善,这种技术将在水产品加工中获得越来越广泛的应用。
