摘    要:南极大磷虾被认为是人类可利用的最有前景的生物资源之一,然而南极大磷虾中氟含量较高的特点阻碍了其在食品行业上的应用与发展。本文综述了南极大磷虾各组织器官中氟含量的分布,以及南极大磷虾氟的来源及富集形态,阐述了南极大磷虾氟的安全性评价,并对南极大磷虾去/降氟方法及其在水产饲料上的应用进行了介绍,旨在对南极大磷虾资源开发和加工利用提供基础参考。

Abstract:Euphausia superba is considered as one of the most promising resources for human consumption.However,the high content of fluorine impedes its utilization and development in food industry.The fluoride content in body tissues and organs of Euphausia superba was introduced and the sources and forms of fluorine in Euphausia superba were discussed.Furthermore,the advances in safety assessment of fluoride in Euphausia superba was elaborated.Finally,current methods to reduce/remove the fluoride content in Euphausia superb and the application of Euphausia superba to aquatic feed were summarized.The goals of this paper are to provide foundation for the exploitation and the processing of Euphausia superba.
