摘    要:综述了热处理对采后果蔬及品质的影响,讨论了热处理对果蔬衰老方面的生理特征如乙烯释放、呼吸、软化、色泽变化及固形物和酸等风味的变化,热处理导致果蔬产生热抗性、防止热害和冷害方面也进行探讨,并展望了热处理技术在果蔬贮藏中的应用前景。

Abstract:Heat treatment technology is widely used to restrain plant diseases and insect pests in storage of fruits and vegetables. Effects of heat treatment on post-harvest fruits and vegetables and their quality are reviewed. Effects on physiological characteristics such as ethylene production, respiration, softening, color change and taste components (soluble solids and acidity) are discussed. Applications of heat treatment technology in the future are forecasted.
