不同时期灌水对强筋小麦郑麦9023蛋白质及其组分的影响

摘    要:
在大田条件下研究了不同时期灌水对强筋小麦郑麦9023蛋白质及其组分的影响。结果表明,随着灌水次数的增加,小麦蛋白质含量呈下降趋势,即W1〉W2〉W3,说明水分增加对蛋白质含量有稀释效应;增加灌水,提高了小麦籽粒游离氨基酸含量,降低了游离氨基酸向蛋白质的转运;随着灌水次数的增加,谷蛋白、球蛋白总体上呈降低趋势,清蛋白呈增加趋势,醇溶蛋白变化较大,谷醇/清球比值降低。成熟期小麦籽粒谷蛋白大聚合体W2处理达到最大值,表明灌两水有利于谷蛋白大聚合体的合成;可提高强筋小麦的烘焙品质。

The effect of different periods of irrigation on the protein and its components of strong gluten wheat variety Zhengmai 9023 was studied in field.The results were as follows.With the increase of irrigation times,the protein content of wheat decreased,i.e.W1> W2>W3,which showed that increasing water had dilution effect on protein content;the free amino acid content of wheat grain improved and the transportation of free amino acids to protein reduced;the contents of glutelin and globulin decreased generally,t...
