摘    要:通过近三年来糙米储藏实仓试验,结合HACCP体系的应用,对糙米低温储藏关键控制点的分析,得出只要各个环节确保关键控制点监测值低于设定关键控制点限值,可以实现糙米长期安全储藏的结论。通过HACCP体系的应用,在积累大量记录的基础上,不仅可以为食品安全的可追溯性提供保障,还可以为糙米低温储藏技术实现持续改进提供依据。

Abstract:By field trials on brown rice storage in recent three years,HACCP of the brown rice storage at low temperature has been analyzed according to the HACCP principles.It showed that as long as each CCP is under control,the brown rice safe storage for long period could be realized.Based on lots of test data in the application of HACCP,it not only assured the traceability of the food safety,but also provided many references for steady improvements of the brown rice storage at low temperature.
