5个杨桃品种果实氨基酸含量及组成分析

摘    要:利用氨基酸分析仪测定了5个杨桃品种果实中17种氨基酸含量,为杨桃的良种选育提供依据。结果表明,杨桃果实中氨基酸种类较齐全,5个杨桃品种果实均含有测定的17种氨基酸,包括7种人体必需氨基酸和2种儿童必需氨基酸。5个杨桃品种果实中氨基酸总量为392.40~541.88 mg.(100 g)-1,含量最低的是红龙杨桃,最高的是台湾软枝杨桃。不同杨桃品种的人体必需氨基酸含量、儿童必需氨基酸含量和味觉类氨基酸含量存在差异。与其他水果比较,杨桃果实中Glu、Ser、Cys等3种氨基酸含量较高。

Abstract:In order to study the effect of different cultivar on fruit flavor and nutritional quality,the content of amino acid in 5 caramhola cultivars fruit was determined in the paper.The results showed that 5 caramhola cultivars fruit all contained 17 kinds of amino acids,among of which 7 essential amino acids including Phe,Thr and Lys were essential to human body,as well as His and Arg were semi-essential amino acids.Total content of amino acids in 5 caramhola cultivars fruit ranged from 392.40 to 541.88 mg·(100 g)-1,the lowest of which 'Yingshianhaibian' caramhola,the highest was 'Erse' caramhola.Moreover,different cultivars of caramhola had also obvious difference in the content of essential amino acids,semi-essential amino acids and taste amino acids.Compared with other fruit,Glu,Ser and Cys in caramhola fruit were higher relatively.
