黑茶发花过程中冠突散囊菌对茶叶中游离氟含量的影响

摘    要:为揭示黑茶发花过程中冠突散囊菌对茶叶中游离氟含量的影响,分别用出发菌株和诱变菌株对毛尖绿茶与黑毛茶进行纯种散茶“发花”,测定不“发花”茶叶、“发花”后去掉“金花”的茶叶、“金花”颗粒及液态发酵前后茶汤中的游离氟含量。结果显示:冠突散囊菌出发菌株与诱变菌株均使黑毛茶的游离氟含量升高,分别较不“发花”的对照茶样提高7.94%和10.47%,但均对毛尖绿茶的无影响;“金花”颗粒含一定量的游离态氟;冠突散囊菌能少量吸收茶汤中的氟,且吸收量与茶汤中游离氟的原始含量无相关性;冠突散囊菌对茶叶中游离氟含量的影响因茶叶的含氟水平不同而异,对氟无富集作用。
