摘 要: | 畜禽产品的鱼腥味问题严重影响肉蛋奶产品的风味和人们对畜禽产品的接受能力,FMO3基因的突变会引发鱼腥味综合征。通过DNA池和测序技术检测导致鸡蛋、鹌鹑蛋产生鱼腥味的FMO3基因敏感位点在鸭中是否存在,寻找鸭蛋鱼腥味产生的原因。结果表明,在鸭FMO3基因第7外显子,共检测到6个SNPs,均为同义突变,在FATGY高度保守区未检测到碱基突变,即导致鸡蛋和鹌鹑蛋产生鱼腥味的FMO3基因敏感位点在鸭中并没有检测到。

Detection of the Fish-odour Mutation Site in the Duck FMO3 Gene |

Abstract: | Fish-odour in meat,cow milk and eggs seriously affect the flavor and reception ability of domestic animal products. The fish-odour syndrome is due to the loss-of function mutation in FMO3 gene. DNA pooling and sequencing were used to screen the mutation site of FMO3 gene,which leaded to the fishy off-flavor in chicken and quail eggs,thus exploring the cause of fish-odour in duck eggs. The results showed that 6 synonymous mutations were detected in exon 7,and no SNPs in highly conserved region (FATGY motif) of duck FMO3 gene. It indicated that the mutation site leading to the fishy off-flavor in chicken and quail eggs was not observed in duck. |
