菠萝豆渣复合饮料的研制

摘    要:豆渣是豆类加工的副产品,将豆渣处理后配以菠萝可以制成富含膳食纤维且具有营养保健功能的饮料。实验研究了稳定剂的选择、豆渣粉的添加量、菠萝汁的添加量、甜酸比等的选择对饮料品质的影响,通过单因素和正交试验确定菠萝豆渣饮料的最佳的配方是:黄原胶0.1%,CMC0.16%,卡拉胶0.04%,豆渣量6%,白砂糖10%,菠萝汁45%。制得的饮料口感细腻,酸甜适中,具有菠萝特有的香味。为豆渣资源的合理利用提供了一条有效的途径。

Abstract:Bean dregs which are rich in dietary fiber are the by-products of tofu.The purpose of this paper was to develop healthy compound beverage by bean dregs and pineapple.This study will provide an effective path for the comprehensive utilization of bean dregs.Using single factor test and orthogonal method,the impression of stabilizer,the amount of bean dregs,sugar and citrate were investigated.The results were analyzed by variance analysis to determine the significance of each factor.The optimum conditions were obtained as follow:xanthan 0.1%,CMC 0.16%,carrageenan 0.04%,bean dregs 6%,sugar 8%,pineapple juice 45%,citric acid 0.05%.The amounts of bean dregs,sugar,pineapple juice and citric acid were all significant factors by variance analysis.The compound beverage was sweet and sour moderate with unique flavor of pineapple.Besides,the beverage contained rich dietary fibers which are good for the health of people.
