| Abstract: | Protein from spores of Agaricus blazei,mutant strain J_ 3, was assessed in terms of six nutritive quality indices Amino Acid Score (AAS), Chemical Score (CS),Essential Amino Acid Index (EAAI),Biological Value (BV), Nutritional Index (NI) and Amino Acid Ratio Coefficient Score (AARCS)]. The CS, AAS, EAAI, BV and NI values of protein from J_ 3 spores were 21.3%, 5.3%, 5.5%, 6.5% and 24.0% higher, respectively than for protein from J_ 1 spores. |
