摘    要:目的]研究石榴皮提取物的抑菌与抗氧化作用.方法]以石榴皮为原料制备石榴皮提取物,研究石榴皮提取物对食品中常见菌大肠杆菌和金黄色葡萄球菌的抑菌活性和抗氧化活性.结果]试验表明,石榴皮提取物具有明显的抑菌效果,对大肠杆菌和金黄色葡萄球菌的最小抑菌浓度分别为0.50 、0.25 mg/ml,石榴皮提取物对羟自由基、超氧阴离子自由基和DPPH自由基这3种自由基具有清除作用,其中对羟自由基清除率最大,表明石榴皮提取物具有显著的抗氧化活性.结论]研究可为进一步开发利用石榴皮等加工副产物提供理论基础和依据.

Abstract:Objective] To study antibacterial effectiveness and antioxidant activity of pomegranate peel extract.Method] The antibacterial effectiveness and antioxidant activity of pomegranate peel extract on Escherichia coli and Staphylococcus which is common bacteria in food was studied.Result] The results showed that pomegranate peel extract significantly inhibited the growth of Escherichia coli and Staphylococcus,the minimum inhibitory concentration was 0.50 and 0.25 mg/ml respectively.The results also showed that pomegranate peel extract had the free radical scavenging capacity.Conclusion] The study can provide theoretical basis and reference for further development and utilization of pomegranate peel.
