采后果蔬冷害发生机理及控制研究进展

摘    要:冷敏型果蔬在不适宜的低温下会出现冷害症状,使其抗病性和耐贮性下降,造成品质劣变或严重腐烂,从而影响果蔬的食用与商品价值。本文在阐述采后果蔬冷害的基本特征及其生理生化特性变化的同时,综述冷害的发生机理及控制技术的研究进展,并提出对采后果蔬冷害需进一步研究和解决的问题。

Abstract:The cold-sensitive fruits and vegetables occured chilling injury(CI) symptoms under the inappropriate low temperatures conditions. Disease resistance and storability of chilled fruits and vegetables both decreased, it would cause serious decay and quality deterioration, which influenced the edible and commodity values. This paper reviewed the basic CI symptoms characteristics and changes in physiological and biochemical characteristics of fruits and vegetables, summarized the research progress on occurrence mechanism and control technologies of chilling injury of fruits and vegetables, and proposed problems which need further research and solution.
