重金属对蔬菜的生理影响及其富集规律研究进展

蔬菜能够提供人体所必需的多种维生素和矿物质，是人们日常饮食中必不可少的食物之一。随着工业化生产的飞速发展，全球污染日益加重，蔬菜产品也受到不同程度的危害，其中重金属污染是影响蔬菜生长和人类身体健康的重要因素之一。本文在前人研究的基础上，从土壤和大气两方面简要介绍了重金属的主要来源，从蔬菜的生长、细胞超微结构、细胞膜透性、酶活性、光合作用和脯氨酸含量六个方面着重分析了重金属对蔬菜作物生长发育的影响及其生理生化效应，进而综述了不同蔬菜种类、品种和器官对重金属的富集规律，并对其分子机制进行了初步探讨。
