魔芋中多糖提取技术及含硒形态研究

摘    要:研究了魔芋中硒的赋存形态、分布及含硒多糖的提取分离技术.用不同的浸提液和浸提方法(热水、稀酸、稀碱、超声波)提取魔芋中的多糖,用水作为提取剂提取魔芋中的蛋白质,并用原子吸收法测定它们各组分中含硒量.魔芋中的总硒含量为2.540μg/g,而多糖硒的舍量为2.241μg/g,占了总硒的88.23%,说明魔芋中的多糖硒为硒的主要赋存形态.同时通过实验可知,魔芋多糖的最佳提取剂为稀碱.

Abstract:The combined forms and distribution of selenium as well as polysaccharide extraction technology were studied in this paper.Different solvents and methods were used to extract polysaccharide and protein in Amorphophallus konjac.Selenium contents were detected by atomic absorption spectrometer.The result showed that the total selenium in Amorphallus konjac was 2.540 μg/g,and the selenium in polysaccharide(2.241μg/g) was the main form storing in Amorphophallus konjac,accounting for 88.23 % of total selenium.It was concluded that the best extract solvent of polysaccharide was dilute alkali.
