摘    要:采用高效液相色谱法分别测定了毛葡萄-1、毛葡萄-2、北国蓝、北国红、法国蓝5个葡萄品种(系)酿制酒中的白藜芦醇及其醇苷的含量。结果表明,葡萄酒中白藜芦醇主要以醇苷的形式存在。可能因气候原因,2017年的葡萄酒白藜芦醇总含量均高于2018年;适时晚采的酒样白藜芦醇总含量高,北国蓝葡萄酒的白藜芦醇总含量达到10.92mg/L。

Abstract:The contents of resveratrol and polydatin in five kinds of grape wine were determined by HPLC.The results showed that resveratrol mainly existed in the form of polydatin.The total content of resveratrol in 2017 was higher than that in 2018,possibly because of the climate.The total resveratrol content of the samples late collected were high,among which the total content of Beiguolan wine reached 10.92mg/L.
