曲霉型豆豉类黑精发酵条件的研究

[目的]对曲霉型豆豉类黑精的发酵条件进行研究。[方法]通过单因素试验和正交试验,确定发酵温度、食盐含量、Fe3＋离子量对曲霉型豆豉类黑精发酵的影响。[结果]单因素试验结果表明,随着发酵温度的升高,豆豉发酵的褐变强度增强,但在55℃后,吸光度基本稳定并有下降的趋势;在盐分为10%时,豆豉发酵的褐变强度最大;在Fe3＋添加量为0.10%时,曲霉型豆豉类黑精褐变强度最大。正交试验结果表明,温度为55℃、盐分为8%、三价铁离子为0.2%的条件是产生类黑精的最佳发酵条件。[结论]该研究确定了豆豉发酵产曲霉型豆豉类黑精的发酵条件,为发酵过程中控制类黑精的形成提供了理论依据。
