烟熏牛肉方腿的研制

摘    要:以牛肉为主要原料加工烟熏牛肉方腿。通过试验选择复配胶作为该产品的粘合剂,通过烟熏等手段及防腐剂的选择和配制,研制出口感好、脂肪含量较低并具有烟熏牛肉风味的方腿。

Abstract:Beefs was the main raw materials to produce smoking beef square ham.Compound letex was chosen to be the binder of this product by the test. And through selecting and making-up of smoking method and preservative,etc,the square hams were produced,which tasted nice,having low tallow content and the flavor of smoking beef.
